Street market shows are commercial establishments where you can find a range of food products from different backgrounds. An important aspect to be taken into account during the marketing of these products are the hygienic-sanitary conditions of these places, which directly imply the quality of the foods offered. Good Manufacturing Practices (GMP’s) are measures adopted with regard to personal hygiene, utensils, equipment and facilities and care during food preparation, in order to ensure sanitary quality and food safety. With this in mind, this study aimed to evaluate the hygienic-sanitary conditions of the street market of the Capanema, located in the southwest region of Paraná.Twenty-five fairs were evaluated through the checklist of good manufacturing practices adapted to current legislation. At the end of each interview, a leaflet with guidance on the importance of adoption of GMP’s was distributed to the marketers. Through this study, it was possible to identify that the main points that need improvement are with respect to the hygiene habits of the manipulators, the forms of food storage and the lack of water which is one of the most critical points found during the evaluation of the market. This study reinforces the need for supervision by the responsible organizations, so that educational actions are implemented through courses, workshops, lectures on GMP’s, in order to raise awareness about their use and minimize the risks to public health. In addition, it would be interesting to implement a water supply system that would make it possible to wash the hands of the manipulators and even perform the sanitation procedures.
