Milk is a food rich in nutritional value and is a great breeding ground for pathogenic and spoilage microorganisms. The objective was to analyze the physical and chemical characteristics and microbiological quality of ten brands of whole UHT milk market in Dois Vizinhos city, PR. The following physical-chemical analysis in two batches of each brand (batches 1 and 2) were performed: pH, nonfat dry extract (NDE), fat, protein, density, freezing point, the water content were determined in milk analyzer (Lactoscan SLP), and the titratable acidity and the addition of peroxide followed the methodology prescribed by law. The results were compared with the Brazilian Law and the Mercosur. Among the 20 samples analyzed in batches 1 and 2, 100% of the results obtained for NDE, 45% for density, 50% protein, and 40% for pH were in disaccord with the law. The microbiological analyzes involved the total count of aerobic mesophilic and were analyzed according to the methods proposed by legislation. Among the 20 samples of UHT milk analyzed, five (25%) had higher values than limits established by legislation. All analyzed milk brands had one or more physicochemical parameters at variance with the provisions of the legislation. Therefore, the results obtained in this study demonstrate that the whole UHT milk marketed in the city of Dois Vizinhos, do not have effective monitoring of the quality criteria and thus require closer monitoring on the part of regulatory agencies.
