Resumen
The photo stimulation is a process used in the areas of health through lasers or LED bulbs for drying resins and treating diseases. Currently the looking for healthy foods has increased and the natural yoghurt has been an alternative. Processes optimization is a constant search of industries in general, so that the present work aims to develop the equipment and the methodology for implementation of photo stimulation in the production of natural yoghurt and verify if there is interference of this procedure in the medium, through experiments to analyze the lowering of pH, acidity, color and viscosity. The equipment presented satisfactory operation and in the middle of the fermentation process the photo stimulation is positive for the first 90 minutes for the lowering of pH, as for color, there was no clear results and to viscosity of the sample photo stimulated with blue light stood out from the others.
