dc.description.abstractLactose intolerance is a digestive disorder caused by the low production of the enzyme lactase by the body, since the production of lactose-free foods is increasing globally, and Latin America being the second largest growth rate in the consumption of these products, there is a demand to develop products that meet the consumption needs of individuals who are unable to digest carbohydrates and it involves reducing the volumes offered, enabling the reduction of milk and financial waste. The survey showed that 76% of consumers approve the introduction of products in smaller portions, whether in liquid milk or powdered one. It was also possible to highlight that the advent of the new version of the products attracts consumers to obtain the item and satisfy their desire to consume milk without having to worry about possible discomforts that were once present in their daily lives.
