Resumen
This article provides indications of measures and circulation spaces considered ergonomically suitable for commercial eating venues. The study was designed based on an analysis of the activity carried out in three different types of restaurants: self-service, a la carte and all you can eat. Firstly, a comparative literature search of researches conducted by other authors was performed. Thus, the main focus of this study was to point out comfortable and safe circulation space for each one of the three types of commercial eating venues, linking them to different ways of serving.
