Resumen
El proyecto consiste en la construcción e implementación de un restaurante de cocina Novo Andina, la cual busca revalorizar nuestros insumos autóctonos que con el paso del tiempo ha ido mejorando pero en porcentajes muy pequeños, además se requiere aplicar estrategias ideales para ofrecer un comercio justo con respecto a los agricultores y productores de primera línea, los cuales muchas veces se encuentran en el interior del país pasando por una calidad de vida muy precaria a pesar de abastecer a los grandes mercados, supermercados y restaurantes de Lima.
El negocio será llamado Ma Shua, nombre de un insumo andino rico en proteínas y minerales que probablemente muy pocas personas conocen. El local estará ubicado estratégicamente en el distrito de Barranco, gracias a la gran afluencia de turistas nacionales e internacionales y por su cercanía a distritos como Miraflores y San Isidro, lugares muy visitados aportando de manera positiva a la economía peruana. El restaurante cumple con una alta factibilidad de responsabilidad social y viabilidad económica ya que la gastronomía peruana hoy en día está muy bien posicionada y reconocida a nivel mundial, se quiere generar ingresos mediante la venta de platos de comida innovadores y los tradicionales, pero con nuevas técnicas e insumos. Se aplicará un concepto de marketing experiencial con los comensales y nuevos clientes para fidelizarlos, para de esa manera hacerles ver que la cocina peruana es más que la cocina criolla, la cocina peruana es unión, es la fusión regional, es una disciplina que denota exquisitez en los paladares más exigentes y que debemos de conservarla y valorarla para aumentar el valor de esta.
