Optimización de la aceptabilidad general del tarwi (lupinus mutabilis) osmodeshidratado en función del agente osmótico.

Con la finalidad de optimizar la deshidratación osmótica del tarwi (Lupinus mutabilis) en cuanto a su aceptabilidad general; se realizó la presente investigación. Se utilizó diferentes concentraciones de sacarosa en el rango de 35 a 45% y cloruro de sodio en el rango de 3 a 10%. La deshidratación osmótica del tarwi, se realizó a 40°C y una relación de producto a solución osmótica de 1 a 4. El tiempo total del proceso fue de tres horas para cada tratamiento. El nivel óptimo de las variables del proceso se determinó mediante el método de optimización por diseños experimentales; empleando un diseño 22 incluyendo 4 puntos axiales y 3 centrales (DCCR); el cual permitió obtener los modelos que definen el comportamiento de las variables independientes de concentración de sacarosa (%) y concentración de cloruro de sodio (%) respecto a la dependiente para la respuesta de aceptabilidad general. El modelo fue altamente significativo (p<0.05); tanto para la concentración de sacarosa como para la concentración NaCl por presentar un coeficiente de determinación R2 altos, siendo posible construir la superficie de respuesta, para lo cual se utilizó el software STATISTICA 7.0. Cabe indicar que la variable independiente que mayor efecto presentó fue la concentración de sacarosa. Según el modelo estadístico encontrado, los niveles óptimos de las variables en la aceptabilidad general son de 6.2% a 6.8 % de NaCl y de 41% a 41.6% de sacarosa. De esta forma el tratamiento cuya concentración de sacarosa y NaCl fue de 40% y 6.5% respectivamente obtuvo una aceptabilidad máxima de 9.6433.
