Resumen
La presente investigación trató sobre la obtención de etanol por vía fermentativa utilizando la cáscara de café (Coffea arábica L.) variedad Caturra y como microorganismo productor la levadura Saccharomyces cerevisiae. El objetivo principal fue determinar la influencia de la temperatura y pH en la fermentación de azúcares hidrolizados obtenidos de la cáscara de café, estableciendo las condiciones óptimas de proceso para la obtención de etanol. Al realizar la caracterización físico química de la cáscara de café se encontró que ésta contiene gran cantidad de celulosa, a partir de la cual, mediante una hidrólisis ácida se obtuvieron azúcares reductores que fueron llevados a fermentación, donde se trabajó con cuatro niveles de temperatura (26°C, 28°C, 30°C y 32°C) y pH (3, 4, 5, 6), obteniendo que la temperatura y el pH óptimos son de 32°C y 5 respectivamente, con una eficiencia del proceso fermentativo de 66.20%, un grado alcohólico máximo de 3.33°GL obtenido en la destilación y 6.54°GL en la rectificación; así mismo se determinó que a partir de 100 kg de cáscara de café se obtienen 2.7 L de etanol
