The objective of this research is to evaluate the antioxidant activity of different concentrations of the alcoholic extract of carotenoids from Rhodotorula sp isolated from the salar of Nuevo Chimbote-Peru, between the months of January and February 2021. To evaluate the antioxidant activity, soils from the Nuevo Chimbote salt flat were randomly sampled. Pure cultures of Rhodotorula sp. were isolated and characterized. The inoculum was prepared in 500 ml Erlenmeyer flasks with 250 ml of dextrose broth and 10 ml of culture previously cultivated and incubated at 25°C and 150 rpm. From the fermentation broths produced, they were centrifuged at 3000 g for 10 min at 5 °C until obtaining 1 g of cell pellet and macerated with 1 g of diatomaceous earth for 10 minutes. He added 20 ml of ethanol (25%) to the macerated sample. After the extraction process, the samples of ethanolic extract of carotenoids were centrifuged (4757 g, 20 °C for 10 min). The antioxidant activities of the isolated carotenoid pigments were determined by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging test. Different desired concentrations of the pigments were evaluated using ethanol (323.50, 161.75, 80.88, 40.44, 20.22 μg/g and a control), and it was concluded that the carotenoids extracted from Rhodotorula sp, present activity antioxidant from the concentration of 161.75 μg/g with a percentage of inhibition of 57.66% of the radicals 2,2-diphenyl-1-picrylhydrazyl (DPPH) of Sigma Aldrich.
