Determinación de proteína, almidón, amilosa y amilopectina del malteado de Triticum aestivum L. Var. Andino – inia y centenario para la industria cervecera

El trigo (Triticum aestivum) es una gramínea de importancia en la nutrición humana y con
diferentes aplicaciones en la industria de alimentos, tal como, el malteado, con un gran
impacto en el rubro de las bebidas alcohólicas. Por tal motivo, el objetivo de la investigación
fue determinar las concentraciones de proteína, almidón, amilosa y amilopectina en el
malteado trigo nativo de la región La Libertad. Las variedades de trigo analizadas fueron
Andino INIA y Centenario. Se recolectaron 49 muestras; que fueron analizadas en dos fases.
La primera fue el análisis del porcentaje de humedad, proteína y almidón total del grano
maduro. La segunda fue la determinación del porcentaje de proteína, amilosa, amilopectina
y almidón total de los granos malteados. Posteriormente se aplicó un análisis de varianza
unidireccional a los promedios de los resultados y una de correlación entre la concentración
de almidón y proteína. Como resultado de la investigación, en el grano maduro, no se
encontró una diferencia estadística significativa entre las variedades respecto al porcentaje
de humedad, almidón total, sin embargo, se encontró una diferencia estadística significativa
entre las variedades respecto al porcentaje de proteína, siendo la variedad Andino INIA la
de mayor concentración. En el grano malteado, no se encontró una diferencia estadística
significativa entre las variedades respecto al contenido de proteína, almidón total, amilosa y
amilopectina. No se encontró una correlación estadísticamente significativa entre el
contenido de proteína y almidón en el grano maduro y malteado. The Wheat (Triticum aestivum) is an important herb in human nutrition and with different
applications in the food industry, such as malting, with a great impact on the alcoholic
beverages sector. For this reason, the objective of the research was determining the
concentrations of protein, starch, amylose and amylopectin in the malted wheat native to the
La Libertad region. The wheat varieties analyzed were Andino INIA and Centenario. Were
collected 49 samples; which were analyzed in two phases. The first was the analysis of the
percentage of moisture, protein and total starch of the mature grain. The second was the
determination of the percentage of protein, amylose, amylopectin and total starch of the
malted grains. Subsequently, a unidirectional analysis of variance was applied to the
averages of the results and a correlation analysis between the concentration of starch and
protein. As a result of the research, in the mature grain, a statistically significant difference
was not found between the varieties regarding the percentage of moisture, total starch,
however, a statistically significant difference was found between the varieties regarding the
percentage of protein, being the Andean INIA variety, the one with the highest
concentration. In the malted grain, no statistically significant difference was found between
the varieties regarding the content of protein, total starch, amylose and amylopectin. No
statistically significant correlation was found between protein and starch content in mature
and malted grain.
