En el presente trabajo de investigación se estudió el efecto del tiempo y temperatura de secado convectivo en la humedad y color del rocoto (capsicum pubescens) y costo energético del proceso. Previo al secado se realizó un escaldado en agua a temperatura de ebullición por un minuto. Los parámetros determinados para el proceso fueron hallados en un diseño compuesto central rotacional (DCCR). Las temperaturas y tiempos experimentados oscilaron entre 50 - 70°C, y 4 - 8 horas respectivamente; manteniendo la velocidad de aire a 3 m/s. Los niveles óptimos para el proceso se determinaron mediante la metodología de superficie de respuesta, obteniendo como respuesta un rango de temperatura de 65 - 70°C y tiempo de 5.7 – 7.7 horas, consiguiéndose una humedad del 7.72 a 10.00%, una ΔE de 15.75 a 16 y costo energético de 20.00 a 26.089 S/. /kg de tiras de rocoto fresco.
