It is important to know the wine as a signal of cultural diversity, which distinguish trough societies, constituting a complex universe which only those interested in this drink have decoded. On the following investigation a practicum analysis was realized, directed to restaurant establishment and clients with the objective to help on comprehension of the benefits of this drink and include its usage on the gastronomic service in Machala City. The methodology was based on bibliographic documental investigation on teoric aspects like origin, farming, strains, degustation and pairing. On the same way, It was realized of a survey, conformed of 10 questions, In which the objective population was represented by 2 restaurants and 40 clients; directing 5 questions for each group respectively. Done the study investigation was obtained a low buying level, knowledge and consumption. this result served to giving a way to the generation of strategies that will help to induce its consume on Machala population.
