The food industry is currently concerned that their processing and food production are safe, so as not to affect the health of consumers. That is why Diana-food SA company from the province of El Oro, processes fruit, some of its products are banana puree, fruit concentrates, candied fruits, the company's productions are supported and guaranteed under the certifications of the standards ISO 9001, ISO 22000: 2005 and FSSC 22000, Food Safety Management System, which are based on the quality of process management and food safety. The present work has as objective to elaborate a technical sheet for the raw material of the banana puree and to be able to detect the critical materials during the process of elaboration and logistics of the banana puree, to research has a qualitative methodology, since it is based on revision bibliography of scientific articles, an interview and an observation sheet of the process of elaboration of the banana puree in the company Diana-food SA.
