The intervention project aims to develop a business plan to optimize and standardize the operation of the artisanal pizzeria "Labati Pizzas", a gastronomic enterprise that is developed in the city of Cuenca and specializes in the elaboration of gourmet artisan pizzas. The work presents a set of data and strategies that will improve the Labati pizzas project in terms of product, customer service, business operations and associated costs.
First, it solves Michael Porter's matrix with a detailed analysis of each of the variants that influence the business environment and formulates a market study based on supply and demand data stratifying consumers.
Subsequently, it elaborates an analysis of all business processes, based on process management, to obtain a manual with standardized flowcharts of all business processes. It proposes a new menu based on the principles of Omnes.
Finally, it displays a financial study and the financial feasibility of the project and its execution both in its current format, as well as in perspective of opening a new point of production and sale.
The work proposes recommendations to innovate strategies that allow Labati pizzas, from an artisanal perspective, to position itself as a strong competitor in the market.
