The proposed recovery of taro: origin, history, nutritional value, with the creation of ten menus that will enrich Sucúa Canton cuisine ", aims to: the use of taro in different dishes with high nutritional value in the diet of Sucúa canton citizens through the development of a cookbook with ten menus.
