Objectives: To determine the changes in the eating patterns in habitants of the neighbourhood El Vergel, Cuenca - Ecuador
Material & Methods: It is a descriptive, prospective and longitudinal study, a sample of 126 families, all with more than 20 years of residence in the neighbourhood El Vergel. Validated by the Chilean society of nutrition, food science and Toxicology surveys were used. We applied the trend survey of consumer food (TSCF) to determine their eating patterns for 20 years ago, a survey where there was the type of food consumed by the inhabitants 20 years ago and the number of times that each of them was consumed weekly. To determine their current eating patterns, we used the food reminder 24 hours modified (FR24Hrs). We made a comparative analysis of the results of the two surveys applied to determine the changes in the eating patterns.
Results: The daily diet in the El Vergel neighborhood 20 years ago is composed by 50% from carbohydrates, 21.1% of proteins, 10.1% of fats and 17.9% of vegetables and Greens. Within the current food pattern was found that carbohydrates make up approximately 60% of the total of nutrients in the diet, followed by protein 18.2%, fat 15.40% and vegetables and vegetables 6%.
