dc.description.abstractIn this paper we analyze the Ministerial Agreement 0004 /10, in order to subsequently rcréate a standar operational manual for the snack bar at “Unidad Educativa La Providencia”. In chapter I, I will refer to the Unidad Educativa la Providencia, as an educational establishment, its history and its current status within the city of Azogues today. This isnti institution is one of the most bygone institutions and recognized he has seen and has grown along with the city and its people, has 1286 students. Chapter II is designed to make a diagnosis of the most fundamental points of interministerial agreement such as, the hygienic parameters, healthy spaces, infrastructure, equipment, utensils, food, beverages, food handling, and personal hygiene. Chapter III. I will discuss the importance of creating an operation manual for school snack bars, with regard to the handling, preparation, and organization of the bars in acordance with the laws of the Interministerial Agreement 0004-10. In Chapter IV I focus on the implementation of the ministerial agreement in snack bars of educational institutions, This paper analyzes the techniques and procedures in the preparation, quality control, food handling and hygiene and sanitation standards, which must be observed. This paper concludes with the application of the manual in the school, as well as the establishment of conclusions and recommendations for possible implementation.
