dc.description.abstractIn the present study was evaluate the hygienewith which it’s treatedraw milkforeach of thesuppliers,from extraction tothe timeit reaches thereceptionofIndustriesLactoOchoa – FernándezCía. Ltda, the samethat comes fromdifferent areas of the provinceof Cañar. It was develop a descriptive observational probabilistic study with a sample of 21suppliers of milk and a samples number of 168. Samples weretaken directlyfrom the storage containerin which to reachthe raw matterto the company,to analyzecountmesophilic aerobic microorganisms was performed usingPetrifilm plates for the AOAC official method 986.33 equivalent to REPcountingmethod(Norm INEN 1529-5:2006. Microbiological food control. Determination of the amount of mesophilic aerobic)obtained results thatwere compared withthe maximumpermitted limitvalue underNormINEN9:2012. Raw milk. Requirements;additionallyheldTRAMtesting with each of thesamplessothatthe resultscould be comparedat the end ofthese tests.TRAMtest as indirect microbiological indicator allowed to classifyraw milkaccordingto its quality considering minimumlimit3 hours tocategorizequality, complying with the standardissuedinNormINEN9:2012. For the interpretation ofthe results, was perform astatistical analysisusingMicrosoftExcel 2013 program and SPSS v. 22.0. The results showthat: 51,2 % of suppliersexceed the maximumallowed limit ofmicrobial loadformesophilicaerobic microorganismsin return TRAMtestindicates that only67,9 % of suppliers do not meetthe criteriagood quality.
