Resumen
The objective of the present titling work was to design a mixing system for formulations of wheat flour fortified with micronutrients in the company Molinos Miraflores SA, it began with the physical-chemical and rheological characterization of wheat flour without fortification extracted from the milling process, finding all the parameters within the regulations that the company manages. Tests were carried out at the laboratory level to determine the density of fortified wheat flour as it is an exclusive recipe and the data necessary for the respective design. Before sizing, the selection and analysis of possible mixer alternatives were carried out. As a result, the one that best fits the company's needs is the vertical conical screw mixer, and variables that influence the process were defined, such as the capacity of the mixing system for 5 kg since it is specifically intended for Quality Assurance Area, the density of fortified wheat flour of 701,373 kg / m3 and volume of the mixer, with the data obtained the mixing system was dimensioned, which consists of three main components: housing with a volume of 0.00927 m3, the upper and lower diameter of 0.20 m, and 0.06 m respectively, and height of 0.637 m; homogenizing screw with a diameter of 0.050 m, pitch of 0.033 m, and number of propellers 18 units; and shaft with a total length of 0.717 m, the turning speed is 70 rpm and with the power of ¼ Hp. Finally, the proposed design was validated through the Physico-chemical and rheological characterization of fortified wheat flour, in which the parameters are within the limits required by the NTE INEN 616: 2015 standard.
