Resumen
In this thesis a gastronomic guided was designed where it is put on manifesto the most outstanding products and traditional dishes of the Canton Guamote, Chimborazo Province. The purpose of rescuing and disseminate the best way of the Guamotena gastronomy. May dishes were identified as part of the culinary culture of social networks, the economical culture of the popular areas in Guamote: 29 dishes distributed as appetizers, soups, main courses and desserts, all this was achieved with the application of surveys and interviews, to Guamote’s population then the respective standardization was drawn detailing production techniques. The design of the gastronomical guide, includes photos of each of the prepared meal, with fast and clear description of the most used cooking technique procedures, ingredients and even the presentation. The gastronomic guide document will serve to share, give out report of the food that the city has, facilitating identification and that may update its details as they will be delivered to the Municipality of Canton Guamote its respective diffusion through their website and gastronomic fairs they think appropriate.
