dc.description.abstractThis thesis designed a cookbook of traditional foods with the use of traditional products from Ibarra Canton, Province of Imbabura, in order to make their preparations the most emblematic of the city. We identified several dishes that are part of the culinary art of social, economic, and cultural networks from Ibarra Canton, for which a survey was established in places where they prepared food to determine the most popular dishes, then the respective standardization, detailing costs and production techniques. The antropological and Gastronomic guide gives an information processing techniques with native preparations in the área.
