Resumen
The following research was carried out in the cooking area of Comando de Policia Chimborazo N0 6 of Riobamba-Chimborazo Province. By be doing in other a descriptive and field analysis which an allowed identifying processes of tools operation to determine the level of knowledge about higiene and Industrial Security. A survey was applied in a sample of 206 workers and customers through stratified sampling by conglomerate, obtaining this form the 77% with lack of information about higiene process and safety, besides the 87% shows lack of tools in the cooking area. The 74% know that exist dangers in the food and beverage are thus the need to train staff to 100% or the prevention and control of industrial higiene and safety. Reaching as result all the factors necessary for the research and development of standards that need the cooking area, simultaneously the production of industrial hygiene and safety plan with varied structured contents based on learning techniques such as: Brain Storming, practical demonstrations in Microsoft Power Point presentations, in order to increased the level of knowledge of hygiene and Industrial safety, which process was performed to workers of the cooking area. The plan shows as result an increased knowledge of hygiene and industrial safety in 88% of workers for preventing and controlling accidents and diseases in the cooking area.
