Resumen
This research aims to: develop a food culture record from Pablo Sexto Canton in Morona Santiago province as intangible cultural heritage; documenting the food traditions, as well as demonstrating the cultural and traditional diversity in the canton; legends, festivals, typical attractions and traditional cuisine which are part of the cultural heritage in this place. To get information were applied interviews to native people of the canton and to the owners from restaurants of typical food and more representative beverages of the place, obtaining important information in order to inventory typical and traditional dishes of Pablo Sexto canton using the National Institute Cultural Heritage tab (NICH) where consists: data of location, referential photography, data identification, description, carriers, evaluation, partners, annexes, control data. Also a standard récipe was developed where involves: name of preparation, type of menú, conservation, ingredients and Assembly of each one of the typical and traditional dishes. It was to document the food culture of Pablo Sexto canton by a magazine, which consists of typical and traditional dishes, its ingredients and preparation. This is intended to keep traditions, customs and cultural events that have been lost in the course of time.
