Resumen
The present work of qualification proposes to carry out a feasibility study for the implementation
of a sustainable restaurant of typical food of the canton Latacunga, San Buenaventura parish
through a descriptive investigation that is supported in bibliographical and field sources to obtain
reliable information, same as it allows to know relevant data about the surveyed population, which
reflected favorable results regarding the implantation of a typical food establishment. In the
design of the project several studies were developed, among them the market which affirms the
existence of dissatisfied demand. In the technical study through matrices, the location, plant
capacity, plans that show how the establishment will be structured architecturally were
determined. The administrative, legal study examined the requirement of human talent through
job profiles, thus determining their respective salaries. In the environmental study, it shows how
environmental remediation measures should be used in order to prevent any type of contamination
generated by the establishment. The financial study determined that the total of the investment is
$ 18,757.89, loan $ 9,522.66, with which the project will be financed, the financial indicators as
Net Present Value (NPV) positive $ 28,126.83, Internal Return (IRR) 47 , 68%, Investment
Recovery Period (PRI) is 2 years 4 months and 7 days, Balance Point (PE) of 7.000 units and
Cost Benefit Ratio (B / C) of $ 1.68 have shown that the Entrepreneurship is viable, based on the
positive results of investment recovery and generated profits, it is concluded that the
establishment has profitability and is sustainable on its own.
