Resumen
The present investigation proposes: to elaborate a gastronomic proposal by means of a recipe book of the typical foods of this zone to promote tourism in the canton of Caluma, Province of Bolívar. Where a survey was applied to the economically active population who have identified which are their main agricultural products, the most outstanding tourist places. In the information obtained we have that orange is its main agricultural product with 38%, banana with 23%, and in smaller percentages we find products such as cassava, tangerine, rice, lemon, sugarcane, sweet corn, coffee and palm. Its main source of income is the commercialization of oranges, the main dishes that were identified were the fry consumed with 16%, with 15% the dry chicken, the broth of hose, green bolons, fish stew, tamales of fish, chigüiles, humitas, stew with meat, shell and shrimp ceviches, many cassava. Complementing with its drinks such as orange, tangerine, lemonade, past coffee and an aniseed alcoholic beverage. Then we proceeded to standardize the recipes of the different menus while retaining their organoleptic characteristics. It concludes with the preparation of a guide where we show the typical dishes and together with them the tourist places that can be visited during the stay in the canton to thereby contribute to tourism development. It is recommended to continue researching and carrying out this kind of technical assistance to support future research.
