Resumen
The main objective of the present research was to prepare salads with organic products, from Maria Carlota Farm located in Quero Canton in the Province of Tungurahua. For this process a guideline procedures system was designed, allowing to prepare different formulations of organic salads, Starting with a washing and disinfection process of the raw materials, and then a Mise en place is carried out, after cutting and dosing of each one of the salad components, in order to carry out the corresponding mixtures, a tasting test is carried out in order to determine the level of acceptability, giving us as a result that the greater acceptance salad was el Rocio salad, whose ingredients are: olive oil, dried oregano, lemon mandarin, pea sprout, pumpkin sprout, onion turnip, mint, potato and beet. With the bromatological and microbiological analysis, to the salads components cultivated at the Maria Carlota Farm, it was determined that they are organic type and acceptable for human consumption. A recipe guide is presented that is going to be a big help in the gastronomy as a new culinary alternative.
