Resumen
The present titling work was applied in the Bio Taita Chimborazo “COPROBICH” Organic Producers and Marketers Corporation, located in the province of Chimborazo in the Colta canton, with the objective of verifying the current status of the Good Manufacturing Practice (BPM) system of the corporation, to take it to its update. Using the deductive and inductive methodology, based on the application of the Checklist of Standardized Sanitization Operating Procedures (POES) and BPM, which evidenced the following results, in the initial diagnosi, obtaining compliance with 53.33% of POES and 80% of the BPM requirements established in the Regulation of ARCSA-DE-067-2015-GGG. With the result found, an Improvenent Opportunities Plan was proposed in which the findings were described shortcomings. The treatment of the requirements found was executed by generating and updating the corresponding documentation, where the procedures, instructions and records, the activity and the application área are located. Fort the verification of the the update of the BPM system, it is done with the application of a new verification checklist, especially with respect to its production line, which is a considerable increase in compliance. Fort he analysis of each requirement established in the regulation, it was performed by quantifying the rating scales designed for both POES and BPPM, the same ones that after being contacted are designed their percentaje of compliance, whose resulting percentages at the end added up to 100%. In conclusión, the application of this work increases the percentage of compliance with BPM requirements by 8%. It is recommended that the plant constantly monitor compliance with the BPM system so that it can change the quality and safety of its processed product.
