Resumen
The present venture proposes to conduct a feasibility study for the creation of a creative cuisine restaurant in Guano canton, through a descriptive and field research, that allows going to the place where the restaurant is intended to be and obtain real information about the current market situation and our potential customers. In the market research, an unmet demand of 89% was obtained, which is positive and strengthens the creation of this restaurant and its potential acceptability both in the product as well as the type of service that will be offered. The technical study established the size and location of the company as well as the standardization of recipes, the process manual, internal regulations and the design of the menu. The administrative study allowed the implementation of the functions manual where the jobs are established according to the professional profile of each one. In the legal study, the investigation was carried out regarding the laws and regulations to which the restaurant will be governed to function properly. The study of the environment served to determine the environmental impact and mitigation methods, which it will apply to reduce it. Finally, the financial study gave to know the evaluators how are the Net Present Value (NPV) in $ 21104.83, the Internal Rate of Return (IRR) in 29%, the Benefit-Cost (B / C) ratio of $ 1.64, and taking into account the profits obtained and the payback period, which allow considering that this project is viable when it is executed. This project will provide a new type of service and product within the Guano canton and will generate employment sources for its implementation and operation, in addition to rescuing the consumption of products of the province of Chimborazo.
