Resumen
The purpose of the research is to implement the Cultural Culinary Register of Baños de Agua Santa County, this turns it into an essential tool for the institution which are focused on the tourist aspects of the County, especially in the typical food of the area in order to preserve the gastronomic identity and promote the food consumptio in the are. For the development of the research some information sources such as surveys and interviews applied to people aged from 65 to 85 were used, they helped to identify the different preparations, in addition some bibliography and web pages were used, they helped to identify the theoretical and methodological references which support the implementation of the Cultural Culinary Register. For structuring the search, it was necesary to use the (INPC) Cultural Heritage Institute´s A4 card as a reference, as well as the information about the county´s gastronomy based on the citizens´ knowledge. The Cultural Culinary register of Baños de Agua Santa Canton contributes to the gastronomic identity and promotes the implementation of entrepreneurship projects with the products from the Country. In this way a recipe book is created as a part of its culinary Culture.
