Resumen
The present research is about a cross-section descriptive design whose objective is to appreciate the Typical-Cultural Gastronomy of San Juan Bautista Parish de Sangolquí of Rumiñahui Canton: by the application of a survey to a 384-inhabitants sample. Socio-demographics characteristics, gastronomic culture and traditional preparations were measured and the results were tabulated by the Microsoft Excel program. From the surveyed people, people, ages from 65 to 75 belongs to 79.69% and from 76 to 80 or more 20.31%; females sex 54.95 and male 45.05%; agro industrial occupation 49.48%, QQ.DD 26.56% and businessman 23.96%; knowledge of the typical and traditional cooking in a medium level with 71.09%, in entries 29.94% and desserts 63,7%. The analysis determines that in typical, traditional gastronomy and parties “hornado, tortillas with caucara, hen broth, lluspas soup, empanada of mejido and morocho de dulce” among other ones. It is recommended that authorities of the autonomous government of the parish gather from the high population, knowledge and gastronomic tradition of the sector and with the information submitted in the informative magazine about gastronomic of the parish mentioned above benefit the culture.
