The method of obtaining starch can establish its quality. Therefore, we sought to determine the influence of the dry and wet method on the starch yield obtained from the oca (Oxalis tuberosa Molina). The study concluded that the highest yield was the dry method. In addition, the physicochemical characteristics of both methods were maintained in the ranges recorded in the reviewed literature. The statistical comparison showed significant differences in most of its values.
