The descriptive research will evaluate the structure of the product design and development. Among the most relevant results obtained, it is worth mentioning the post-hoc segmentation of the dehydrated fruit consumers market carried out by means of the multivariate statistics technique Hierarchical Cluster Analysis, on a survey of benefits sought applied to 394 people. Likewise, based on this segmentation process, a limited nomenclature of products was defined, consisting of infusions of Fruit Mix, Red Fruits, Cinnamon & Apple and Ginger & Pineapple, aimed at satisfying the interests of the market segment identified as a target. In addition, the corresponding production process was designed with its respective plant distribution and the economic-financial feasibility of the investment project was validated by calculating a Net Present Value equal to $ 174.589,42 and an Internal Rate of Return of 673.015,4%.
