Resumen
Streptococcus (S.) thermophilus CRL1190 es una bacteria láctica probiótica productora de un polisacárido extracelular (EPS1190, 1782 kDa constituida por glucosa y galactosa en proporción 1:2) que demostró ser beneficioso para el tratamiento preventivo y terapéutico de la gastritis. Aunque aún no se conoce su bloque estructural repetitivo; estudios espectroscópicos (IR y Raman) confirmaron la naturaleza neutra del EPS1190 con enlaces tipo α y β1 . Este trabajo pretende profundizar el estudio estructural del biopolimero y evaluar algunas propiedades tecnológicas importantes para su uso en la industria alimentaria. CRL1190 se cultivó en leche descremada reconstituida (10%) durante 16 h a 37ºC; posteriormente se extrajo, purificó y liofilizó el EPS producido. La macro-estructura del EPS1190 se analizó por test de Rojo Congo y por dicroísmo circular (DC); mientras que la ultra estructura se complementó por espectroscopia SERS, utilizando nano-partículas de plata (AgNP) sintetizadas, caracterizado por microscopía electrónica de barrido y espectroscopías UV-Vis, Raman y de rayos-X de energía dispersiva. Finalmente, se evaluó sus propiedades floculantes emulsificantes (medidas de tamaños de gotas por microscopía óptica, 10X) del EPS1190 comparando con polisacáridos comerciales: Gomas guar y xántica.
