Resumen
Libros, cocina e inmigración…, recupera el aporte de un editor inmigrante radicado en la ciudad de Rosario (Alfonso Longo), a la culinaria regional. Este editor publicó en la década de 1920, lo que estimamos, una de las primeras serie de recetarios de cocina de matriz rosarina. Los libros eran reproducciones de obras mayores que, habiéndose publicado en Europa con amplio éxito, el editor local se dispuso a compartir con el público de su ciudad. Analizar estos textos nos permitió reflexionar alrededor de algunos aspectos: primero, el mercado editorial y sus prácticas. Segundo, las adaptaciones culinarias (cómo el editor interviene en las recetas para hacerlas factibles en su ciudad), tercero el lugar asignado tanto a varones como a mujeres en el reparto del saber y del hacer culinario. En este punto, la lectura de género termina de componer las claves para analizar un panorama donde las mujeres cocinan en el plano doméstico y los varones se insertan con ese saber-hacer en el espacio público. En síntesis, el texto resume y analiza los mencionados aspectos.
