Resumen
La enfermedad celíaca es una enteropatía crónica de origen autoinmune, manifestada como una intolerancia dietaria permanente ante la ingesta de un grupo de proteínas denominadas prolaminas, presentes en los cereales. Derivados de estos alimentos, la gliadina es capaz de activar la respuesta inmune en estos pacientes y perpetuar el proceso autoinmune. El tratamiento consiste en la eliminación de las proteínas tóxicas de la dieta (o dieta libre de gluten), que provoca la recuperación de la mucosa intestinal en meses.
