Resumen
Los estudios de residuos orgánicos recuperados en cerámicas arqueológicas aportan información sobre las prácticas culinarias del pasado. Investigamos un conjunto de contenedores cerámicos hallados in situ y asociados a un área de combustión en la Estructura E3 de El Colorado, Catamarca, Argentina, datado en el siglo XIV d.C. Se trata de dos tinajas Santa María, un puco Santa María y una olla. Realizamos análisis químicos por cromatografía gaseosa-espectrometría de masa (GC-MS) y cromatografía líquida de alta resolución-espectometría de masa con ionización por electrospray (HPLC-ESI) de los residuos lipídicos absorbidos en las matrices cerámicas. Analizamos sedimentos de las áreas de combustión, de actividad y de una zona externa a modo de control. Se caracterizaron los perfiles de ácidos grasos, esteroles y acilglicéridos, y se realizaron búsquedas de biomarcadores para la identificación de los orígenes de los lípidos.
