Resumen
Food, vegetables, and grains are important raw materials for food production. They are also providers of nutrients and energy and contain many valuable compounds as pigments and antioxidants. Plants have been a source of therapeutic and health-promoting compounds throughout history. Dietary fiber is a nutrient, and its importance for human health is linked to its effects on glucose and lipid metabolism, prebiotic effect, protection against certain gastrointestinal diseases, and colon cancer. This chapter discusses the conventional and emerging technologies used for the recovery of dietary fiber from plant agro-industrial by-products.
