Resumen
La enfermedad celíaca es una enfermedad prevalente en la niñez cuyo tratamiento consiste en la exclusión de alimentos que contengan gluten de la dieta. Muchos métodos actuales de detección y cuantificación de gluten requieren equipamiento especializado y de elevado costo y/o presenta complicaciones en su aplicación en alimentos procesados. el objetivo general del presente trabajo de investigación fue: estandarizar evaluar, aplicar y analizar un inmunoensayo competitivo rápido aplicado a la cuantificación del contenido de gluten a través de la determinación de gliadina en alimentos destinados a niños celíacos.la técnica de ELISA es un tipo de enzimoinmunoanálisis que se basa en la gran selectividad de os anticuerpos y la elevada actividad de las enzimas utilizadas, lo que permite el reconocimiento específico de gliadina y la amplificación de la señal generada por la muestra respectivamente. los ensayos que usan enzima como marcador presentan importantes ventajas como elevada sensibilidad, detectabilidad y especificidad; equipamiento de bajo costo; procedimientos técnicos rápidos y sencillos; alta precisión y exactitud; reactivos económicos y de larga duración.
