Relationship of size and marbling score of hump with carcass characteristics in bovines slaughtered in an abattoir in Villavicencio

To determine the relationship of measurements of the hump with carcass cattle traits were evaluated carcass of zebu males (n = 200) in a slaughterhouse (Colombian east). Statistical model included as independent variables height and marbling score of the hump and dependent variables Slaughter weight, hot carcass weight, carcass yield, fat cover score and KPH fat weight. For the analysis, it used regression analysis and correlations between variables and height and marbling of the hump. The average of hump height (AG), marbling score at the hump (EG), hot carcass weight (PCC), carcass yield (RC), KPH fat weight (GV) and fat cover score (GC) were 15.3±5.77 cm, 3.72±1.58, 452±47.5 kg, 254±27 kg, 56.4±2.1 %, 10.4±0.92 kg y 2.19±1.02, respectively. AG was correlated with and RC (0.326), PCC (0.231) and EG (0.226). And EG were correlated with GC (0.348) and AG (0.226). These results indicate the possibility of including measures of the hump to complement the assessments of quantitative and qualitative characteristics of type Zebu cattle carcass.
