Educação alimentar e nutricional e interdisciplinaridade: promoção de hábitos saudáveis em pré-escolares no município de Vitória de Santo Antão/PE

Alterações expressivas na qualidade e quantidade da alimentação do brasileiro, vem
resultando no aumento da prevalência de sobrepeso, obesidade e das doenças crônicas não
transmissíveis, evidenciando a importância de modificações no comportamento alimentar.
Nessa situação, a educação alimentar e nutricional (EAN) na fase pré-escolar, sendo esse o
período de formação dos hábitos alimentares que provavelmente persistirão por toda vida,
entra como importante estratégia para a promoção e prevenção de agravos à saúde, através de
uma alimentação adequada e saudável. Neste contexto, o presente estudo teve como objetivo
realizar atividades de EAN de forma lúdica e interdisciplinar com crianças da educação
infantil, a fim de propiciar conhecimento sobre alimentação e nutrição e incentivar hábitos
alimentares saudáveis. O trabalho foi realizado com 18 crianças, de faixa etária entre cinco e
seis anos, pertencentes às duas turmas do Pré-II, Ensino Infantil, turno matutino do Grupo
Escolar Municipal Pedro Ribeiro da rede de ensino de Vitória de Santo Antão/PE, no período
de abril a maio de 2018. Inicialmente foi realizado o diagnóstico do perfil alimentar dessas
crianças, a partir da observação e aplicação de questionários sobre o consumo alimentar com
os pais/responsáveis e com as próprias crianças, também foi realizada reunião com as
professoras e mantido um contato frequente com as mesmas para o desenvolvimento da
interdisciplinaridade, entre os assuntos da EAN, as disciplinas e conteúdos da matriz
curricular das crianças. Após isso foram desenvolvidas cinco atividades, onde se trabalhou um
tema por atividade, sendo realizadas duas por semana, em cada turma, tendo durabilidade
média entre trinta a quarenta minutos cada. Observou-se, através do diagnóstico do perfil
alimentar, que as crianças preferiam consumir alimentos industrializados, com alto teor de
açúcar, sódio e gordura, como salgados fritos, salgadinhos de pacote, embutidos, doces em
geral, refrigerantes e sucos em caixa. Com relação ao efeito da intervenção nutricional foi
bastante positivo, identificou-se uma boa interação das crianças com as atividades EAN e que
estas tiveram uma influência satisfatória nas práticas alimentares dos pré-escolares,
evidenciadas na diminuição do consumo de alimentos industrializados, como biscoitos,
salgados e refrigerantes, e aumento do consumo de alimentos mais saudáveis, como frutas,
pão, queijo e sucos naturais. Concluiu-se que esse trabalho foi de suma importância para
despertar a curiosidade, conhecimento e empoderamento das crianças para uma alimentação
adequada e saudável, e a utilização da interdisciplinaridade, além de contribuir para a
formação acadêmica, fomentou o conhecimento sobre nutrição. Significant changes in the quality and quantity of Brazilian food have resulted in an increase
in the prevalence of overweight, obesity and chronic no communicable diseases, evidencing
the importance of changes in dietary behavior. In this situation, food education and nutritional
(EAN) in the pre-school phase, which is the period of formation of eating habits that are likely
to persist throughout life, is an important tool for the promotion and prevention of health
problems through diet adequate and healthy. In this context, the present study aimed to carry
out EAN activities in a playful and interdisciplinary way with children in early childhood
education, in order to provide knowledge about food and nutrition and encourage healthy
eating habits. The study was carried out with 18 children, aged between five and six years,
belonging to the two classes of Pre-II, Infant Teaching, morning shift of the Pedro Ribeiro
Municipal School Group of the education network of Vitória de Santo Antão / PE, in the from
the period of April to May 2018. Initially a diagnosis of the food profile of these children was
made, based on the observation and application of questionnaires on food consumption with
the parents / guardians and with the children themselves, a meeting was also held with the
teachers and maintained frequent contact with them for the development of interdisciplinarity,
between the subjects of the EAN, the disciplines and contents of the curricular matrix of the
children. After this, five activities were developed, where one theme was worked per activity,
being carried out two per week in each class, with an average duration of between thirty and
forty minutes each. The following themes were discussed: the concept of healthy eating and
its benefits; the importance of hand hygiene; the discovery of fruits through the senses of the
human body; what are vegetables and vegetables and the importance of their consumption and
lastly the empowerment of children for the choice of food. The effect of the nutritional
intervention was very positive, a good interaction of the children with the EAN activities was
identified, and that these had a satisfactory influence on the preschooler's eating practices,
evidenced in the decrease of the consumption of industrialized foods, such as biscuits, salted
and soda, and increased consumption of healthier foods such as fruits, bread, cheese and
natural juices. It was concluded that this work was of paramount importance to awaken
children's curiosity, knowledge and empowerment for an adequate and healthy diet, and the
use of interdisciplinarity, in addition to contributing to academic, training fostered knowledge
about nutrition.
