The imbalance in the nutritional status of the Food and Nutrition Units (FNU) worker directly interferes in the performance of their duties, since being overweight contributes to making work even more exhausting. The performance of repetitive movements, weight lifting and long periods of standing are common features within the work developed in a FNU and to exercise such functions the implications on the nutritional status of the worker are of great relevance. The research aimed to seek what the literature records about the nutritional status of food service workers. It is a selection of scientific articles searched in different databases such as Portal Periódicos Capes, Google Scholar, MEDLINE, LILACS and SciELO, using Health Sciences Descriptors - DeCS, indexed in the Virtual Health Library. Numerous studies have found high prevalence of overweight among workers and all the articles analyzed demonstrated that overweight and obesity among workers in the collective diet is a reality. Is a preponderant factor, as it is a worrying factor from the point of view of workers' health and its impact on public health and productivity, there is a need for further review studies to assess the nutritional status of workers in the most diverse areas of activity. O desequilíbrio no estado nutricional do trabalhador de Unidades de Alimentação e Nutrição (UAN) interfere diretamente no desempenho de suas funções, uma vez que o excesso de peso contribui para deixar o trabalho ainda mais desgastante. A execução de movimentos repetitivos, levantamento de peso e longos períodos em pé são características corriqueiras dentro do trabalho desenvolvido em uma UAN e para exercer tais funções as implicações no estado nutricional do trabalhador são de grande relevância. O presente trabalho teve como objetivo buscar o que a literatura registra sobre o estado nutricional de trabalhadores de serviços de alimentação. Trata-se de uma seleção de artigos científicos buscados em diferentes bases de dados como Portal Periódicos Capes, Google Acadêmico, MEDLINE, LILACS e SciELO, utilizando-se Descritores em Ciências da Saúde – DeCS, indexados na Biblioteca Virtual em Saúde. Inúmeros estudos têm constatado altas prevalências de excesso de peso entre trabalhadores e todos os artigos analisados demonstraram que o sobrepeso e a obesidade entre os trabalhadores da alimentação coletiva é uma realidade. Por ser um fator preocupante do ponto de vista da saúde do trabalhador e o seu impacto na saúde pública e produtividade, sugere-se a realização de mais estudos que abordem o estado nutricional dos trabalhadores nas mais diversas áreas de atuação.
