Resumen
The demand for a healthy diet that prioritizes the use of natural ingredients
has increased in recent years, causing the food industry to renew itself to serve these
consumers that from the greater awareness of the benefits that good eating habits
provide, become each more demanding. This course completion paper presents the
details of producing banana chips from the land with extra virgin coconut oil and no
added sodium in order to offer an affordable product and meet the needs of
consumers who have a healthy lifestyle or restriction in sodium intake. It presents the
functionality, characteristics and benefits of ground banana and coconut oil, detailed
description of the process, mass and energy balances related to production, unit cost
of the finished product and the importance of waste treatment in industry.
