dc.description.abstract | This job aimed to assess the presence of Enterobacteriaceae in the powder milk production chain and the influence of the pre-enrichment to number the Enterobacteriaceae. Another experiment aimed to accomplish the analysis of the 2073/2005 Directive from European Union: Enterobacteriaceae, Staphylococcus coagulase positive and its enterotoxins. It was used both traditional and fast methodologies. When the methodologies were compared, it was observed the equivalence between them (p > 0, 05). When the counting of Enterobacteriaceae in the raw milk related to the other positions, there was a significant difference (p < 0, 05). From the thirty samples of milk powder, only two presented positive result to Enterobacteriaceae, even though only one of them does not answered the 2073/2005 Directive (20UFC/g). There was equivalence between both the traditional methodology and the 3M Petrifilm Enterobacteriaceae (p > 0, 05). To the Staphylococcus analysis there was a difference between both the traditional methodology and the 3M Petrifilm Staph Express (p > 0, 05), since the first presented typical and atypical colonies in the Baird-Parker main, but all presented negative result to the coagulase test. Using the 3M Petrifilm mean it was ensured the presence of S. aureus in 46,7% of the samples. To the staphylococci enterotoxins, 100% of the tested samples presented negative result | |
