Artisanal Minas cheeses are considered intangible heritage, with strong cultural representativeness, in Minas Gerais. The aim of this work was to evaluate the microbiological characteristics of the artisanal Minas cheese commercialized in the municipal market of Montes Claros, Minas Gerais, for which, eight samples of cheeses were acquired and analyzed, all of which presented values higher than allowed by legislation for total coliforms and Staphylococcus aureus, whereas for Escherichia coli two samples had values lower than the maximum allowed value. The outcomes showed that the cheeses analyzed do not comply with the requirements of the Brazilian legislation.
