Waste products from coffee production process (mucilage and pulp) can be used to extract pectin;
an industrial raw material, which is not produced in Colombia and has to be all imported.
This project was done in order to help Ambiental Mente to characterize the pectin’s commercial
environment in the food industry of Antioquia. From secondary source material, field work in
supermarkets and interviews to representants of companies directly related to the pectin and its
distribution channel, a positive disposition to buy and sell national pectin was identified, with the
special requirement of this pectin being of high quality and approved by each of the Research and
Development ( R+D ) company areas.
