        Resumen
        The following business plan raises the idea and design for the creation of LE-PATATA, a fast food establishment, more specifically French fries, served in a cone, with varied accompaniments such as sauces, toppings and spices, managing the take sales model. in the city of Tunja, Boyacá. This business idea seeks to provide a quality service based on business principles, such as ethics, commitment and sustainability, being an authentic, solid, profitable and innovative organization that seeks to satisfy customer expectations and generate value. The business model that is proposed allows the consumer to enjoy a variety of flavors according to their choice, since the French fries not only have three different presentations (Small Cone, medium and bowl type), but the customer will also have the opportunity to select variety of sauces, toppings (accompaniments) and spices, this model will break with the traditional way of consuming French fries as a simple accompaniment, since in the company it is shown as the main product, in addition it will reinforce in the city of Tunja the trend of take away sale, which literally translates to “Take away”, although its intention refers more to “To eat on the go”. As a company, LE-PATATA seeks to highlight the properties of potatoes as a typical Boyacense product, turning a traditional product into an innovative, eye-catching and delicious one. The potato used during the production process is of organic origin, arranged, peeled and cut inside the establishment, the variety of sauces includes cheddar cheese, guacamole, BBQ, coastal serum, honey mustard and even a house sauce based on garlic In terms of ingredients, a variety of meats and vegetables are also included that perfectly accompany the flavor of French fries such as chicken, bacon, mushrooms and chives, among others, finally the company will have a variety of spices ( Salt, pepper, oregano, paprika, etc.) free of additional cost for flavor-free addition to the customer's product. In relation to the location of the establishment, the northern sector of the city was selected, more specifically the Santa Inés neighborhood, close to the Unicentro Tunja shopping center, located on the university avenue, this area is stratum 4 and by its nature represents a commercial sector and housing with concurrence mostly by people with medium-high purchasing power, also in an area close to several higher education institutions in the city. For the commercialization and distribution of the product, there will be a point of sale in the location already described above, the adjustments will have a tendency towards artisanal and will have the Boyacense tradition implicit, mixing this with trends in industrialized, minimalist and modern interior design. Additionally, LE-PATATA's point of sale and production will have quality machinery and equipment and the necessary adjustments to ensure compliance with sanitary and quality specifications in all phases of storage, production and sale of the product. The initial investment will be $ 70,000,000 Colombian pesos, divided firstly into an investment in fixed assets of approximately $ 55,000,000 between machinery and equipment, office equipment, adjustments and furniture and fixtures, and secondly, an amount approximately of $ 15,000,000 corresponding to working capital, available in cash and banks, expenses paid in advance and raw materials necessary for the start of the operation. The financial indicators and the cash flow of the project show very positive results, showing that the project has great potential for the generation of value, for example, the NPV of the investment calculated on cash flows of the first 5 years of operation exceeds the 2,000 million pesos, the projected income statement shows a profit after tax of 25% of sales and the Benefit-Cost ratio is over 2.5 points. In order to fulfill the expected returns on investment, it is necessary to work on the strategies proposed in the market, operational area, finance, business sustainability and social responsibility, since the fulfillment of the objectives will depend on the rigor with which the activities of planning and operation of the business idea.
