This document presents the design of an automated system for the pasteurization and spinning stages in the cheese-making process of the Del Altiplano Productos Lácteos company in the municipality of Jenesano - Boyacá.
The research carried out on the cheese manufacturing process is evidenced, in addition to the necessary instrumentation to automate the stages worked on in the project (pasteurization and spinning).
The design includes a piping and instrumentation diagram (P&ID), which shows all the instruments and connections of the automated stages; The functional chart for the control of stages and transitions (Grafcet) is also included, where the programming carried out is shown in an orderly way, stage by stage; finally, a simulation that shows the operation of the human machine interface (HMI); In this it is possible to observe the physical variables captured by sensors in the process, configure the variables that determine the operation of the actuators and select the type of cheese to be made.
