In the development of the field work, there were problems with regard to the re-structuring of the population of the municipality, since from the subjective perception of the rural inhabitants, their labor was scarce. Likewise, environmental reciprocity was highlighted in front of this agricultural production, since one of its foundations is not to produce quantity but quality. Therefore, several protagonists subscribed to this research through ecological strategies and selection to build strategies based on the quality of coffee. Highlighting the historical fact that at some point in the production of the cafeteria of the twentieth century, a worldview was born that was born from the green revolution, producing more to supply a world market. Historical process, which ended in social and economic chaos, since not only the fall in prices affected its production, since rural Colombia was in the midst of an armed conflict and economic openings that stimulated the importation of food, such as coffee. That, as a consequence, at the beginning of the 21st century, coffee is considered as a social capital, in order to stimulate its profitability.
