Globally, food losses are recorded in the supply chain, these losses affected by the accumulation of organic solid waste that can be valued through biological processes. This article evaluates the production of hydrogen with food waste from the El Mortiño Market Square (Bogotá, Colombia). An experimental design was built based on the physicochemical characterization of the substrate where a factorial system was constructed with two independent variables: organic load, on 2 levels, 15gSV and 20gSV; and the temperature, working under mesophilic (35 ° C) and thermophilic (55 ° C) conditions. To assess the stability of the process, pH conditions were established between 5.5-6.0. The daily production of H2 was monitored, the tests ended by identifying the presence of CH4. The results of the test of the best conditions for the production of hydrogen with this residue are 20 gSV, with a hydrogen production equal to 1032 mL / gSV. The defined economic quantification defines the valuation project is not viable, the financial indicators project a NPV $ 82'260.564.329 and IRR -10%.
