The central object of this research was to develop and implement the manual of good manufacturing practices (BPM) for the purpose of complying with the traceability, safety and quality strategy of the Esmeralda Company's food products Quality Fruit SAS The quantitative methodology based on a theoretical-practical component with a non-experimental descriptive approach, allowed the realization of a hygienic-sanitary diagnosis that led to the design of the GMP manual and implementation of the basic regulatory sanitation program. As a result of the process, the BPM manual was formulated for the company under study and training was carried out for production personnel in the development and maintenance of the program according to its update. It is concluded that with the implementation and training of personnel on GMP, an improvement in sanitary facilities, food handling personnel, hygienic manufacturing requirements and quality control assurance will be required, since the initial diagnosis percentage was of 61%, while the final diagnosis after the execution of BPM improvements was 91%.
